1 cup plain flour
3/4 cup plain cornmeal
2 1/2 tsp baking powder
pinch of baking soda
1/2 tsp salt
pinch of sugar
1 cup grated cheese
1/4 cup dried tomatoes
1 cup buttermilk
1 large egg
3 Tbsp oil
Preheat oven to 400.
Grease 12 muffin cups or put in paper liners.
Mix dry ingredients flour, corn meal, baking powder, salt, sugar, soda, dried tomato flakes and grated cheese.
In another bowl stir together the buttermilk, egg and oil. When mixed, pour into the dry ingredients and mix gently till moistened.
Put into muffin cups and bake for 20 minutes. I like to bake these with the muffin pan sitting on a cookie sheet to keep the bottoms from getting too done.
You can add crumbled bacon, powdered cheese (extra flavor), garlic chips, or basil to suit your taste.
