Cherry Squares

These are so good and so easy to make, you can use any fruit.

Difficulty: Easy

Servings: 14-16 bars depending on size

Prep Time: 20 min.   Cook Time: 30 min.

2 cups flour
1 1/2 cup sugar
1 cup melted butter
2 cups quick oats
1 tsp. soda

Mix all ingredients together to make crumbs. Press all but 1/2 cup into bottom of pan. Spread about 4 cups cherry filling or any thickened fruit on crust. Top with remaining crumbs and bake at 350 degrees for 30 min.

I like a pineapple filling for the middle:
1 No# 3 can crushed pineapple, 1 cup sugar, 1 Tbl. cornstarch,1 tsp. lemon juice.
Cook filling till thick in saucepan. Cool before using. I like to put 1 tsp. grated orange in the crumb mixture.
