These cookies are made with simple ingredients and are so simple to make. What could be better than shortbread cookies and chocolate!?
Servings: 24-36 depending on how big you make them
1 box of Lorna Doone shortbread cookies
24 oz. (approx 4 cups) chocolate chips, I use Ghirardelli
Melt chocolate in a double boiler. While chocolate is melting, crumble the whole box of cookies into small pieces, but not crumbs, into a large bowl. Once chocolate is melted, take off burner and pour over cookies. Make sure to scrape out all the chocolate! Fold together coating the cookies well. Drop by spoonful or by using an ice cream scoop onto a parchment paper lined cookie sheet to cool. You may need to put them in the frig to set.
