
Colcannon is a traditional Irish mashed potato dish, usually served with lamb, but is excellent with corned beef. Shredded cabbage may be used instead of the kale. Either way is delicious.

3 pounds potatoes, peeled and cut in chunks
3 cloves garlic, minced
4 cups shredded kale
warmed cream or milk
2 tablespoons butter, additional
1/2 cup diced scallions
Directions
Saute kale and garlic in 4 tablespoons butter until wilted but not browned.
Peel potatoes and cut in chuncks. Place in saucepan, cover with cold water and bring to a boil. Simmer until tender. Drain and mash with butter and warm cream.
Add wilted garlic and kale to potatoes. Scatter diced scallions over top and add more butter.
Garnish with a bit of parsley for added color.
