Cornbread Salad

We have enjoyed this delicious salad for years, but have never quite known just what is supposed to be in it! Does anyone have a recipe that they have used?

    Curious to see what comes up on this. I haven’t eaten it, but have heard good things about it. I even remember one person’s recipe – 2 boxes Jiffy made as box directs, cool and crumble. Add diced green bell pepper and diced onion and enough Hellmans’ to hold it all together LOL.

    Pete, This is what my friend sent me in her exact words!

    “I don’t have a specific recipe for Cornbread Salad, I just throw together a bunch of stuff.”

    Leftover cornbread, crumbled or torn into pieces
    Diced Green Onions
    Diced Tomatoes
    Crumbled Bacon
    Chopped boiled egg
    Chopped Green Pepper
    Salt
    Pepper

    For the dressing I sometimes just mix mayo and Miracle Whip and sometimes Mayo and Ranch Dressing and mix it all together and chill.

    Thank you for your replies, friends! I managed to forget to check the notification block, so just now found your replies…

    Since we don’t add sugar to cornbread, I prefer using salad dressing and sweet pickle relish in it, but that is just a matter of personal taste. We tried it with chopped eggs, and don’t particularly like it. I did add chopped sun dried tomatoes one day, and it is great! We still do that.

    Maybe no one else has a recipe either! It sure is good stuff, though. And a great way to use up any cornbread that may have gotten a bit too dry, or overcooked. I nearly burned some a couple of days ago so it wasn’t particularly as cornbread. It had a very successful second life as almost cornbread salad however. (No onions ore celery, but still good.)

      I have watched my SIL make this several times, but like most of her recipes, they come from off the top of her head! She crumbles corn bread into a 9×13 glass dish, spreads cooked pinto beans over the corn bread, then combines chopped green pepper, chopped red onion and chopped sweet pickle and spreads this mixture over the beans. Mixes mayonnaise and sweet pickle juice and pours it over the peppers, pickles, and onion. She puts chopped tomatoes over the mayonnaise and then tops it all with crumbled bacon. She takes this to our family picnic in Babcock State Park. Never has to pack any leftovers home. Will try to come up with specific amounts and post it in Farm Bell Recipes. Hope this is helpful.

    Hey guys…. i’ve been thinking about this since the original post….had never heard of this before…

    was thinking of cutting or crubling the cornbread in chunks, toasting it a bit in the oven, then tossing with tomato, bacon & cheese…
    still not sure on the dressing…maybe just the mayo thinned with a little pickle juice…or i think kraft has a sun dried tomato italian dressing that might be good too

    what do you think? any ideas?

    Still pondering all this myself! If I can catch a cool day (to make cornbread) and some energy, there may be a recipe forthcoming…

    It’s called Easy Cornbread Salad.

    Really, anything you like can be in cornbread salad. The basics are crumbled cornbread and something to hold it together, using mayonnaise or salad dressing of some kind. The rest is up to your personal tastes!
