Another childhood favorite we ate often because we raised our own Cornish hens.
Servings: 4Prep Time: 15 mins Cook Time: 1 1/4 hours
1 (6.12 oz) package long-grain wild rice
2 cups hot water
2 Cornish hens, cleaned and halved
salt and pepper to taste
1 (10 1/4 oz) can cream of mushroom soup
1 (6 oz) can mushrooms, drained
Pour uncooked rice in bottom of 3 quart shallow baking dish. Pour hot water over rice. Place Cornish hens on top and season with salt and pepper to taste. Sprinkle flavor packet in package of rice over hens.
Cover with aluminum foil and bake at 350 for 1 hour.
Uncover and pour soup and mushrooms over hens.
Bake uncovered for 15 minutes more.
