
Lovely on your summer table. Inexpensive for pot lucks. Adjust your vinegar to taste and try cider or red wine vinegar.

Prep Time: 20 minutesIngredients
I head cabbage, red or green, grated (I prefer red for the color)
4 carrots, grated
1/2 cup raisins
1 medium finely sliced onion
I like to use chives with red cabbage or red onion if I use green cabbage (Its a color thing!)
1 cup mayonnaise
1/2 cup, or to taste, of vinegar
1/4 cup oil
salt and pepper to taste.
Directions
Whisk together mayonnaise, vinegar, sugar. and oil. Toss with cabbage mixture. Refrigerate at least 2 hours to let flavors ‘bloom’. Enjoy!
