These biscotti make the perfect gift.
1/2 c. dried cranberries
1/2 c. boiling water
3 c. flour
2 tsp. baking powder
1/4 tsp. salt
4 Tbsp. butter
1 c. sugar
2 tsp. vanilla
1/2 c. unsalted pistachios, chopped
Place cranberries in a small bowl. Add the boiling water. Let stand until plump, about 15 min. Drain and set aside.
Sift the flour, baking powder, and salt. Add the flour mixture. Mix in cranberries and pistachios. Turn out the dough onto a floured surface. Divide in half. Shape each piece into a 16×2 inch log. Flatten the logs slightly. Bake at 350F for about 25 min. or until slightly firm to the touch.
Place logs on a cutting board and immediately slice with a serrated knife into 1/2″ thick slices. Arrange slices, cut side down, on a cookie sheet. Bake 10 min. per side until golden.
