Servings: 10-12Prep Time: 30 minutes Cook Time: 5-8 hours
Melt butter in a skillet and saute onion, celery, parsley, and mushrooms. Pour over bread crumbs in a large bowl. Add seasonings and mix well. Pour in enough broth to moisten; add eggs and mix together well. Pack lightly in crock pot. Cover and cook on High for 45 minutes then reduce to Low for 4 to 8 hours.
Note: Two (7 ounce) packages of seasoned stuffing mix may be substituted for bread crumbs. Use 3 to 3 1/2 cups chicken broth and omit herbs and salt.
