Delicious eggplant casserole from my grandmother’s maid who was with her for 30 years in Barbados.
Servings: 4Prep Time: 5 Cook Time: 15 - 20 mins (until cheese is bubbly and golden)
small red or green sweet pepper
Recipe for 1 regular eggplant:
Chop and peel eggplant and soak in salted water for 5 – 10 mins. Boil 10 – 15 mins until cooked. Mash eggplant with potato masher then add chopped onion, sweet pepper and tomato.
Beat 1 egg and add to eggplant. Stir in some breadcrumbs to combine.
Bake in a dish with some cheese on top.
