Servings: 2 Large Glasses
Prep Time: 5-10 minutesIngredients
2 cups whipping cream, cold
1 1/4 cups confectioners’ sugar
1 pint box strawberries, cleaned, hulled, and mashed
Directions
Whip cream until thick but not stiff. Gradually beat in confectioners’ sugar, a little at a time. Fold in mashed strawberries. Spread in an 8-inch square dish and freeze until firm.
** I put mine in 2 large glasses.

This sounds good! My mom used to make a very similar dessert called strawberry fool. The difference is that in her recipe the strawberries were sweetened rather than the cream and it wasn’t frozen. A fool is an English dessert made of crushed berries mixed with whipped cream (the name comes from the French word for crushed, foulé). It was a predecessor to ice cream. My mom knew it as a Depression era recipe for how to make a pint of strawberries feed 6 or 8 people. I guess cream was cheap but strawberries were a luxury.
