This is a quick side dish that gets rave reviews.
Servings: 4Prep Time: 10 min
1 can of drained garbanzo beans
1 tsp. chopped fresh ginger
3 garlic cloves crushed
1 red bell pepper seeded and finely chopped
1 tsp. dried mixed italian herbs (or 1 Tbsp. fresh)
1 Tbsp. red wine vinegar
2 Tbsp. olive oil
Salt & pepper to taste
Mix everything together and stir well. Refrigerate a few hours prior to serving to let flavors blend. Recipe is easily doubled, if needed.
