Gloria's Dark Moist Chocolate Cake

This cake has no eggs or milk. It is super moist and the coffee makes it rich and dark. The recipe originally called for water but I discovered coffee made it even better. The recipe originated during World War I or II (not sure which) because of the shortage of ingredients. My sister-in-law, Gloria, gave the recipe to me so I attribute it to her.

Difficulty: Easy

Servings: approx. 12 - 3" servings

Prep Time: approx. 20 minutes   Cook Time: 30-40 minutes  

Ingredients

3 cups all-purpose flour
2 cups sugar
2/3 cups cocoa
2 cups cold coffee (can substitute water)
2/3 cup oil
1 1/2 teaspoons salt
2 teaspoons vanilla


2 1/2 teaspoons baking soda
2 teaspoons vinegar

Directions

Mix flour, sugar, cocoa, coffee or water, oil, salt, and vanilla until a smooth batter is formed. Do not over mix*. Mix soda and vinegar until soda is dissolved and add to cake batter. Stir into batter until soda solution is thoroughly incorporated. Pour into 9″x13″ greased pan (can use 2 – 9″ round pans).


Bake at 350 degrees for 30 – 40 minutes or until cake tester comes out clean in the middle of the cake.

* Over mixing causes cake to become tough. Mix only until ingredients are thoroughly combined.

    I tried this recipe this weekend and it is great! I made cupcakes with cream cheese frosting and it was a great combo. It made just short of 2 dozen cupcakes and took about 17 minutes at 350.

    It really is super moist and is so quick and easy. I have found a new go to chocolate cake recipe. Thanks for posting!

    OMG..I just made these this evening and they are so good! I just started the Vegan thing for health reasons and I think these will satisfy that Chocolate craving from here on out. I will definitely be making this recipe many more times. thanks so much for posting this recipe. 🙂
