Servings: 20 squaresPrep Time: 15 to 20 minutes Cook Time: 20 to 25 minutes
1/3 cup melted butter
1/2 cup honey (I use Buckwheat raw honey)
2 cups rolled oats
1/2 cup brown rice flour
1/4 teaspoon baking soda
1/2 teaspoon xanthan gum
1/4 cup heaping mini chocolate chips
1/2 cup chopped sweetened,dried cranberries

Preheat oven to 325. Lightly grease an 8-inch or 9-inch square baking pan.
In a large bowl, combine the butter and honey. Mix till well blended. Add all the remaining ingredients and mix well. Pour out into the prepared pan and press firmly. (using waxed paper works well, I lay a piece over top and press evenly)
Bake 20 to 25 minutes until lightly browned. Let cool before cutting into squares.
