
This is a great recipe for any ham bone! It’s a nice change from a pea or bean soup. We like it served over or rice or small pasta.

Prep Time: 15 minutes Cook Time: 45 to 60 minutesIngredients
2 tablespoons corn oil
1 large onion, chopped
3 large garlic cloves, finely chopped
1 1/2 teaspoons ground cumin
1 teaspoon dried thyme, crumbled
1 bay leaf
1/2 teaspoon dried crushed red pepper
2 (14 1/2 oz) cans chicken broth
1 (14 1/2 oz) can sliced stewed tomatoes
1 ham bone with some meat on it (or 1 1/2 cups diced ham)
Directions
In a heavy Dutch oven heat corn oil over medium-high heat. Add onion and garlic. Sauté until tender (about 5 minutes). Add cumin, thyme, bay leaf, and crushed red pepper, and stir to mix through. Then add chicken broth, stewed tomatoes, and ham bone with some meat on it (or 1 1/2 cups diced ham).
Simmer for about 45 minutes to an hour.
