Hashbrown Sausage Breakfast Casserole

A co-worker brought this to work one morning and I just had to have the recipe.

Servings: about 8   Prep Time: 20 minutes   Cook Time: 45 minutes  


1 lb. sausage
1 bag hashbrown potatoes
1 can cream of mushroom soup
5 eggs
10 oz. cheddar cheese (save ΒΌ to garnish the top)


Brown the sausage and drain. Mix the sausage and hashbrowns together in a large mixing bowl. Combine remaining ingredients in a medium mixing bowl, and then pour over the top of sausage and hashbrown mixture. Mix all ingredients and pour into a greased, 9×13 pan. Garnish with remaining cheese. Bake at 350 for about 45 minutes or until a knife comes out clean.
