Help! Vegan recipes needed!

My firstborn has just informed me that today is the first day of his week long project – Going Vegan – for his public speaking class.

You have to understand, this boy would gnaw at a cow on the hoof if he could and now we have to come up with tasty, filling (he’s a teenager) vegan recipes for a boy who hates his veggies. No eggs. No butter. No dairy of any kind. What’s a mother to do?

    There are a lot of great recipes out there for your newly vegan son…even if it is for only one week. Seitan (or wheat gluten) is a great meat substitute that can be cooked with a variety of seasonings to make it taste meaty. You can buy Bob’s Red Mill Wheat Gluten or you can make your own with flour and water (kind of lengthy). Also, tofu really isn’t all that bad. You can make a chicken-fried “steak” that’s both quick and easy. And then there are a plethora of ways to make veggie burgers that are tasty without the generic taste or, for your son, an overly vegetable-y taste.

    Drumwyf, Thanks for the reply. Once I calmed down I found a lot of recipes that were either vegan or could be adapted right here on FBR. I made Moopsies
    “Mel’s Curried Lentils” last night. That’s the right title, I think.
    It got rave review from my husband and my son’s friend who did try to go vegetarian for a while. He was surprised it actually had taste and is considering a return to vegetarianism, now.
    My major problem is milk and eggs. I wonder if applesauce and the vital wheat gluten you mention would help muffins hold together. We couldn’t find eggless egg substitute. And after spending nearly $100 on his supplies alone, I really am looking for cheap substitutes, not expensive replacements.

      Yes, I thought about legumes after logging off, Lavenderblue. You can do so much with lentils, and beans just rock. As far as egg replacers for baked goods go, 1/2 banana that’s been well mashed will serve as 1 egg for muffins, as would 3 Tablespoons of apple sauce. The wheat gluten works well in breads. There are recipes on Bob’s Red Mill’s website. I hope that you enjoy your venture into vegan eating.
