Muffins (or cake) made with honey and banana to sweeten. No sugar. Quick, easy and delicious.
Servings: 24 muffinsPrep Time: 15 Cook Time: 28 minutes
1/2 cup butter
3/4 cup honey
1 ripe banana
2 tsp vanilla
1 cup yogurt
3 cups flour
1/2 tsp cardamom
1/2 tsp salt
1 Tbsp baking powder
Preheat the oven to 350 degrees.
Cream the butter and honey. Add the banana, eggs, vanilla, and yogurt. Mix well. Mix dry ingredients in a bowl. Add slowly to the wet ingredients until incorporated.
Bake in papers or greased cupcake pan for 28 minutes. As soon as you put them in the oven, lower the temp to 325–it makes taller muffins.
