Hootenanny Pancakes

This puffy, frittata-pancake hybrid casserole makes a yummy and easy breakfast without standing guard at the stove as required for traditional eggs or pancakes. It doesn’t get any easier than this!

Difficulty: Easy

Servings: 4 hungry adults

Prep Time: 5 minutes tops   Cook Time: 20 minutes

1/2 cup of butter
1 cup white flour (whole wheat doesn’t work well)
1/2 tsp salt if using unsalted butter
1 cup milk
6 eggs

Preheat over to 400.

Place butter in 9×13 pan and melt in oven while mixing ingredients. Pour in egg mixture and bake for 20 to 25 minutes (depending on how golden you like them). Serve with maple syrup or your favorite fruit sauce.
