Hot Cocoa Bread
This is a bread I made up for Morgan because she loves hot cocoa so much!

Difficulty: Easy

Servings: 12

Prep Time: 15 minutes   Cook Time: 1 hour  

Ingredients

1/2 cup cream cheese, softened
1/4 cup butter, softened
1 1/2 cups sugar
1 egg
1 teaspoon vanilla
1 1/4 cups cocoa powder
1 1/4 cups buttermilk
2 1/4 cups all-purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup mini marshmallows

Directions

Combine cream cheese, butter, and sugar. Cream with a mixer. Add egg and vanilla. Mix again. Add the cocoa powder and about 1/2 cup of the buttermilk; mix well. Add all the remaining ingredients (except the marshmallows) and stir to combine. Stir in the marshmallows. (If you don’t have mini marshmallows, you can cut up big marshmallows.) Spoon into a greased loaf pan. This makes a large loaf–use your largest loaf pan.

Bake at 350-degrees for one hour.

    The flavor of the bread was great. However I used my biggest loaf pan and the batter overflowed all over the oven. I ended up with only about an inch of batter that was still soupy in the bottom of the pan at the end of the hour in the oven. You could tell from the baked bits on the edges of the pan that it would have been really good. Not sure why the inch that was left was still soupy… I will try again.

    Clearly I made some sort of mistake yesterday (the hazards of cooking with 3 kids 7 and under). Tried it again today and it was perfect. YUMMMMMMMM!

    Ohhhh, Suzanne..you’ve done it again!! This hot cocoa bread is so delicious, I just made it this morning. I can’t wait to make it again for the holidays and all of the family. I put the batter in a muffin pan (12 muffins) about 1/2 full and then the rest of the batter in a loaf pan. Made a slimmmer loaf and cooked just fine. Excellent!!!

    I made this to freeze as gift basket goodies, the recipe yielded 4-5 mini loaves (i liked it better as 5, but didn’t know that until after i had done a batch as 4 and they were pretty big). Being the serious baker that i am, i had to break one of the loaves open to make sure it was good enough to give away, and both myself and my husband loved it. great recipe!

    Just made these – made 18 cupcakes and 12 donut-shaped cakes. The marshmallows “disappeared” from the donuts, leaving holes where they were! 😀
    So — think I’ll lightly frost w/a marshmallow icing.
