Lentil Sausage Soup

Hearty and filling – a great meal in itself!

Freezes well and reheats in microwave well. I have added in cheese tortellinis 15 min before done and cooked them in as well.

Difficulty: Easy

Servings: 6

Prep Time: 10 min   Cook Time: 1 hour  

Ingredients

1 1/2 pounds mild Italian Sausage, browned and drained
1 carrot, chopped fine
1 rib celery, minced
1/2 tablespoon onion powder
2 cups lentils
1 cup rice
1/2 teaspoon garlic powder
salt and pepper
oregano, basil, seasoning salt
2 – 8 oz cans tomato sauce


Directions

Put the browned sausage (chop up finely or take off the casing before you fry it) and water (10 cups) and carrot, celery, onion powder, and lentils in pot. Boil/simmer for 35 minutes.


Add in 3 more cups water and rice and boil/simmer 15 minutes more.

Add in oregano, basil, couple shakes of seasoning salt, and two 8 oz cans of tomato sauce — and you have my dinner!

Freezes well and reheats in microwave well. I have added in cheese tortellinis 15 min before done and cooked them in as well.
