Mama's Zucchini Bread

A very moist and flavorful bread recipe my mom gave me.

Difficulty: Easy

Servings: 2 loaves

Cook Time: 50-60 minutes  


3 eggs
2 cups sugar
1 TB vanilla
1 TB lemon extract
2 cups grated zucchini
2cups flour
1 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt, 1 cup oil
1 cup chopped pecans
1 cup raisins {optional}


Beat eggs until light and frothy. Add sugar, oil, vanilla, and lemon extract mixing until thick. Add zucchini and stir well. Add flour, baking powder, soda, cinnamon, and salt to mixture. Then add nuts and raisins. Bake in greased loaf pans at 350 degrees for 50-60 minutes. This freezes well.
