I found this in an old Amish cookbook. There was a recent request for an easy meatloaf recipe for her son, and this seems pretty kid friendly to me.
I’ve not made this, and I don’t know if a child would like mushroom soup. I think I would substitute an 8 oz. can of tomato sauce for the soup.
I would guess that it would serve 6 or more. Of course we love leftovers warmed up for sandwiches, if there is any left over. I would guesstimate that the prep time would be 10 minutes or less, and baking time 45 minutes to an hour. We usually make meatloaf in a bread pan, so it might bake quicker in an 8″ square pan.

1/2 cup tomato juice
1 beaten egg
1/2 teaspoon salt
1 # hamburger
3/4 cup oatmeal
1/8 teaspoon onion salt
1/8 teaspoon pepper
1/2 can cream of mushroom soup
Mix all together except soup and Tater Tots. Press into 8″ square baking dish. Top with soup and Tater Tots. Bake at 350* until meat is no longer pink.
