Mel's Mock Nog

Not so heavy on the calories, but good mouth feel and flavor. Huge hit with family and friends. Kind to the budget.

Difficulty: Easy

Servings: 8

Prep Time: 10 min

2 packages Jell-O brand instant vanilla pudding (small ones) [or one large one]
4 cups 2% milk, cold
1 – 14 oz can sweetened condensed milk
1/2 teaspoon grated nutmeg
1 1/2 teaspoons rum extract
6 cups 2% milk
1 cup ice
milk to finish off gallon
1 cup heavy cream (opt)

Whisk milk and pudding together until thoroughly combined. Whisk in sweetened condensed milk until completely stirred in. Let set 3 minutes.

Stir in the nutmeg and rum extract (both to flavor). Whisk in the 6 cups milk and ice. Add in enough milk to fill up to gallon. Cream optional. Ready in 1/2 hour.

Keeps nice for 5 days.
