Mexican Rice

Easy rice side dish with Mexican flavor. My kids like to sprinkle cheddar cheese on top.

Servings: 6   Prep Time: 10 minutes   Cook Time: 20 minutes  


1 cup rice (I use white)
2 cans black beans, drained and rinsed
1 can diced petite tomatoes
1 can Rotel
1 tsp cumin
salt & pepper to taste


Mix rice with 2 cups water and salt. Bring to boil, cover and simmer for 15-20 minutes, until rice is tender. Add beans, tomatoes and Rotel, including juice from tomatoes and Rotel. Add cumin, pepper and additional salt, if needed. Simmer until hot.
