Mom's Squash Casserole

This recipe is my special request at each holiday we spend at my parents’ house. It was my favorite holiday side dish growing up, and now I can make it anytime I crave it! Yum!

Difficulty: Easy

Servings: 6-8

Prep Time: 15-20 minutes   Cook Time: 30-45 minutes  


2 lbs. squash
1 can cream of chicken soup
1 medium onion, grated
1 carrot, grated
1/2 cup sour cream
1 stick margarine


Cook squash and drain. Butter casserole dish. Mix ingredients and pack in dish. Sprinkle with bread crumbs. Bake at 325 ‚Äď 350 for 30 to 45 minutes (until bubbly).
