This is the best and easiest go to dessert. You can substitute for any kind of extract. We love vanilla or lemon.

1 pie crust regular (9″ is fine)
1/2 cup butter
1 1/2 cups sugar
1 Tablespoon cornmeal
1 Tablespoon distilled white vinegar
1 teaspoon vanilla extract (can substitute lemon extract)
Put a stick of butter in a glass measuring bowl. Microwave to melt (about a minute). Add sugar, eggs, vanilla, cornmeal, vinegar and vanilla. Whisk with fork and pour into pie shell.
Bake at 350 for 35 minutes.
