This is a stuffing for people who don’t like stuffing. Or sage. I know, sacreligious to to some, but I’m in that category!
Servings: 12Prep Time: 10 minutes Cook Time: 45 minutes, or as per your bird
1 lb Italian or chorizo sausage, skinned or diced
1 large onion, diced
4 stalks celery, sliced
8 oz mushrooms, sliced
2 red peppers, small dice
2 cloves garlic
4 oz pine nuts
2 tsp salt
2 tsp ground pepper
1 tsp celery seed
2 loaves white bread, fresh, cubed
4 tbsp butter
1 box chicken stock
Saute off all the vegetables in butter, just lightly. Add to large bowl with cubed bread. Pour in chicken stock. Brown sausage and add to bowl. Toast off pine nuts in dry skillet, add to bowl. Add spices. Taste and adjust accordingly. Either stuff bird, or bake in casserole dish, as usual stuffing.
