North Carolina BBQ Slaw

My mom is from North Carolina, where BBQ is vinegar based, and a good BBQ sandwich is topped with this vinegar based slaw! It’s a must have if you want to eat “Lexington” style!

Difficulty: Easy

Servings: 8

Prep Time: 3 hours chill time   Cook Time: 10-15 minutes

1/3 cup sugar
1/3 cup ketchup
1/3 cup white vinegar
11 cups shredded cabbage (about 1 medium cabbage)

Combine first 3 ingredients in small saucepan; bring to a boil, stirring until sugar dissolves. Pour hot vinegar mixture over cabbage; toss well. Cover and chill at least 3 hours.
