Oven Pancakes
This is a quick and easy family breakfast.

Ingredients

4 large eggs
1 cup milk
1 cup flour
cinnamon if desired

Directions

Preheat oven to 385F. While oven heats, put a few pats of butter into a cast iron skillet and put in the oven to melt the butter. If you don’t have a skillet, just butter the inside of your favorite baking dish. Mix the ingredients till smooth and resembling, well, pancake batter. Pour batter into heated skillet and bake for 25 minutes or until top is golden brown.

    I wanted to make this today and realized I had run out of milk. But I had some Rice Dream with Vanilla so I gave it a try, and it was delicious. It puffed right up and we ate it all, sprinkled with cinnamon and sugar. Next time I’ll make it with milk. Its kind of like Yorkshire Pudding isn’t it? But I’ve never succeeded with Yorkshire Pudding. This was easy and tasty. Thank you!

    I make this often with apples. In an oven proof pan, combine 1/2 stick butter, 1/4 cup brown sugar, a sprinkle of cinnamon, and 2 apples chopped (do not need to peel). While the apples are getting hot and a sauce is developed, I mix the pancake ingredients. I add a little vanilla and a pinch of salt to the egg mixture. Pour the egg mixture over the apples, and bake about 20 minutes in a 425 degree oven. Flip onto a large plate and dust with confectionary sugar. This is my son’s fave, and he’d eat it for dinner if I’d let him.

    I forgot to mention that I cook the apples on the stove top, and don’t put it into the oven until I pour the pancake mixture on top of the apples. Sorry.

    I preheat the oven when I start chopping the apples.
