Mix peanut butter, sugar, egg and vanilla in a small to medium bowl until well incorporated. Make dough into small balls and place onto ungreased cookie sheet. Flatten each ball with a fork dipped into sugar; I do a criss-cross pattern. Put into a preheated 375 degree oven. Bake for 10 minutes. Remove from oven and let sit for a few minutes before removing from pan.This gives them time to set. Place on cooling rack to cool. Enjoy
