Pepper Sauce

I want a really good pepper sauce to put on my turnip greens, collards or mustard greens. I used to use the pepper sauce Mama made…haven’t had any of that in a year! Sure do miss all the stuff Mama made and I just took for granted. Stupid me!!!

    That was my question, Dede! “Pepper sauce” means so many things, depending on region, phase of the moon, or whatever. Some folks just put small hot peppers in a jar then fill it with vinegar, while others spice it up. Then there is the whole Tabasco kind of thing. Or something more like salsa. Or…

    I mean the vinegar kind. I guess here in the South pepper sauce is just peppers in a bottle with vinegar added. So you can add things to the vinegar/pepper bottle? Like garlic cloves for a garlicky sauce?
    You don’t have to process the bottles in any way? I don’t think I ever remember Mama doing a hot wat bath on her pepper sauce.
    Yea….here in the South pepper sauce is something we put on turnip greens…LOL

      Now you’re getting beyond my knowledge base, deb! I just know that you see all sorts of different combinations of little bottles (each labeled “Pepper Sauce”) on tables in diners around the country.

      Hmmm. It may be time to get out the old trusty BBB…

      And looking in there, found nothing that sounds like what you want.

    Found one which may do for you, deb, over at cdkitchen. Posted it here in our recipes – called “Pepper Vinegar.”

    At least it’s a place to start in figuring out what exactly you want in yours!

    My preference is a very basic pepper in vinegar sauce. The commercial version seen around here is Texas Pete Pepper Sauce which is Tobasco peppers in distilled vinegar. The pepper sauce I make is either serano or cayenne peppers in distilled vinegar.
    I’ve tried other hot sauces and always come back to the basic.
