Mama fixed this quite often and we loved it over rice.
Servings: 6Prep Time: 15 - 20 mins Cook Time: 35 mins
1 pound sirloin
2 Tbsp butter
1 Tbsp paprika
1 1/2 cups beef broth
1 cup chopped onions
2 green peppers, chopped
2 Tbsp cornstarch
1/4 cup water
1/4 cup soy sauce
2 tomatoes, cut in wedges
Slice meat crosswise of grain into think strips, brown in butter; sprinkle with paprika. Add beef broth, cover and simmer 30 minutes.
Stir in onions and green peppers; cook, covered, for 5 minutes.
Blend cornstarch, water and soy sauce; stir into mixture until clear and thick, about 2 minutes.
Add tomatoes and stir gently.
Serve over rice or thin noodles.
