A very quick and easy salad, that everyone will love. A great way to use up veggies from the garden.

2 cups uncooked spiral pasta
1 cup cubed cheddar cheese
1 cup chopped Broccoli**
1 cup chopped Cauliflower**
Pepperoni slices, chopped
Zesty Italian salad dressing
**you could use other kind of vegetables, like cucumbers, tomatoes, carrots, green onions…whatever is available
Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, cheese, broccoli, cauliflower and pepperoni. Add salad dressing and toss to coat. Cover and refrigerate until serving. If possible allow it to sit overnight before serving, it helps the flavors to come together. You may need to add more dressing before serving, as the noodles sometimes soak it up.
