Out of all the cheese balls I make, this one is always a favorite!
1 can crushed pineapple
2 (8-oz.) pkgs. cream cheese
1 T. finely chopped onion
1/2 c. finely chopped green pepper
1 tsp. salt
Using a paper towel, squeeze all liquid from pineapple. Mix pineapple, cream cheese, onion, green pepper and salt. Can add some of the pecans to it. Shape into a ball. Place remaining pecans on outside of ball. Chill until firm and serve with Ritz crackers.
