Polish Cheese Rolls (Blintz)

This recipe came from my grandmother who immigrated from Poland in 1924. I have ate them my whole life. They are great with sauerkraut and kelbasa.

Servings: 12   Prep Time: 45 minutes   Cook Time: 30 minutes  


10 eggs
2 cups water
2 cups flour
2 tsp. salt
small curd cottage cheese
i stick butter


Beat eggs and water in a large bowl until light and foamy. Add flour and salt. Batter will be very thin. Heat a large frying pan, brush with oil. Add batter to cover pan, when set, turn over. When bottom is covered in small brown dots, remove to a plate. Spoon approx. 3 TBS. cottage cheese in center, fold in sides and then ends. Place seam down in 13 x 9 pan. Repeat with the rest of the batter. You should have twelve rolls. Cut butter into 12 pieces, place a piece on each roll. Cover pan with foil. Bake at 350 for 30 – 45 minutes until butter is melted and the rolls are heated through.
