
A good quick meal for lunch or supper. Serve with a green vegetable and mashed potatoes.

Servings: 2 quart casserole
Prep Time: 10-15 minutes Cook Time: 30 minutesIngredients
1/2 cup rice
1 pound ground beef
1 teaspoon salt
1/2 teaspoon pepper
1 onion minced
1 small can tomato soup
1/2 cup water
Directions
Wash the rice, then combine it with the meat, salt, pepper and onion. Shape the mixture into small balls. Mix together the soup and water and pour over meatballs. Using a pressure cooker if possible, cook the meatballs for 12 minutes. Otherwise, cook them tightly covered in casserole dish for 30 minutes.

Hi Mrs. Turkey! I grew up eating this delicious dish, talk about comfort food! My Mother had six of us kids and this was an easy, economical dish that we all would enjoy. Thanks for the memories!

Good evening Jan……yes I am from Maine. A very small town in Maine…really rural! We like the recipe for porcupine meatballs. Must make it again soon…you got me hankering for it now LOL!
