
Chicken at it’s best…simply scrumptious meal!

Cook Time: 8 minutes in pressure cookerIngredients
3 pounds chicken cut into serving pieces and skinned.
1 teaspoon salt
1/8 teaspoon pepper
2 Tablespoons vegetable oil
1 1/2 cups sliced onions
2 cloves garlic minced
2 Tablespoons minced parsley
1/2 teaspoon chopped fresh oregano(or 1 teaspoon dry)
1/3 cup chopped carrots
1/2 cup chopped celery
1 (16 oz.) can Italian tomatoes, chopped
salt & pepper
1/2 cup white wine
1 (6 oz.) can tomato paste
Directions
Season chicken with salt & pepper. Heat cooker, add oil. Brown chicken a few pieces at a time. Sprinkle garlic, parsley, and oregano on chicken. Add onions, carrots, celery, tomatoes, salt, pepper and white wine. Close, cover securely. Place pressure regulator on vent pipe and cook 8 minutes with pressure regulator rocking slowly. Cool cooker all at once. Place chicken on warm platter. Stir tomato paste into sauce in cooker. Simmer until thickened. Pour over chicken.
