
Wonderful pumpkin muffins. Makes a big batch to share or freeze.
Difficulty: Easy
Servings: approx. 2 dozen muffins
Cook Time: 15-20 minutesIngredients
4 eggs, lightly beaten
2 cups white sugar
1 1/2 cups cooking oil
1 3/4 cups pumpkin
3 cups flour
1 tablespoon cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups raisins (optional)
brown sugar (optional)
Directions
1. Blend eggs, sugar, oil and pumpkin; beat thoroughly. Add all dry ingredients and mix until smooth. Stir in raisins if desired.
2. Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar.
3. Bake at 375 degrees for 15-20 minutes.
