Rasberry Pudding

This is an excellent cake like dessert that goes well with any summer fruit. One of my favorites, sour cherries. Try it, I think you’ll like it as much as we do. Growing up this would be breakfast or dinner, served with hot milk.

Difficulty: Easy

Servings: 12

Prep Time: 10 minutes   Cook Time: 30 minutes

1/2 shortening
1 cup sugar
2 eggs
2 1/2 cups flour
3 1/2 teaspoon baking powder
dash salt
1 cup milk
3 cups fruit cut up **

We normally add more fruit

Measure all dry ingredients in bowl, set aside. Cream shortening and sugar until light and fluffy. Add eggs, one at a time beating well after each addition. Alternate adding dry ingredients with milk, starting and ending with milk. Mix until dry ingredients are incorporated. Gently fold in fruit.

Bake in two 8″ round cake pans at 350 degrees for 30 minutes or until it tests done.
