Ratatouille is a French vegetable stew. It is best with all fresh vegetables. You can use more or less of certain vegetables depending on preferences.

This freezes well and still has a fresh vegetable taste in winter. A nice treat. It is incredible on pasta with large grated Parmesan. It also makes a unique lasagna.
