This is a supremely moist and delicious cake!
Servings: 12Prep Time: 15 mins Cook Time: 45 mins
1 1/2 c sugar
1/2 c butter
1/2 t salt
1 1/2 c butter milk
1 t vanilla
2 c flour + 2 T
1 t baking soda
2 c diced rhubarb
Mix sugar, butter, egg, salt, buttermilk, and vanilla. Sift flour and soda and add to egg mixture. Mix well. Add rhubarb.
Pour into 9×13 pan and top with 1/2 cup sugar plus 1 t cinnamon.
Bake in 350 oven for 45 minutes.
