Very moist cake and so easy to make using just one bowl. I used cherry pie filling with Splenda and the cake was still wonderful.
Servings: 10Prep Time: 10 minutes Cook Time: 1 hour plus 1 hour for cooling
2 cups flour
3/4 cup sugar
3/4 cup vegetable oil
2 teaspoons vanilla
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 can (21 oz.) cherry pie filling
1 pkg (6 oz.) chocolate chips
1 cup chopped walnuts or pecans
Preheat oven to 350 degrees F. Grease and flour 9-cup fluted pan or 10 inch tube pan. Mix flour, sugar, oil, eggs, vanilla, baking soda, cinnamon, and salt in a large bowl. Add cherry pie filling, chocolate chips and nuts. Stir until just blended. Pour into greased pan and bake in 350 degree oven for 1 hour. Cool for 10 minutes, then remove from pan and cool completely.
Before serving, sprinkle top with confectioners sugar if desired. This cake would also be wonderful served with whipped cream or ice cream.
