Risotto a la Milanese

This makes a wonderful side dish or, with the addition of some chopped meat, can be a meal.

Difficulty: Easy

Servings: 6

Prep Time: 10 min   Cook Time: 30 min or longer  


4 Onions
1 lb of Rice
Chicken or veggie stock (check the rice package for the amount)
Parmesan Cheese
Salt and Pepper


Risotto a la Milanese is an original Italian recipe:

Cut up onions very fine and fry to a nice brown. Throw into the rice into the stew pan and let it slightly color; moisten with good stock and cook for 35 minutes. Check your package for amount of water called for and just sub stock in it’s place. Season with pepper and salt, a little nutmeg, and Parmesan cheese. Serve very hot. Chopped truffles or mushrooms may be added.
