Roasted Okra

This recipe is from Southern Living Magazine back in July 2009 from the Chef section. I have been cooking this each year since I have had the recipe. It is very good; even if you don’t care for okra.

Servings: Multiple        


whole okra pods, tops trimmed
olive oil
salt to taste


Line a baking sheet with aluminum foil. Place okra on sheet, drizzle olive oil over okra, sprinkle lightly with salt, mix up and turn over. Cook at 400 degrees for 30 minutes, turn over half way through.
