Semi-Late Earth Day Cookies

What crazy person put Earth Day the Friday before Easter? Who decided that?

Because I TOTALLY can’t handle that much Technicolor baking, cooking, and decorating in one weekend. If I had tried to make cookies for Earth Day, on Earth Day, I would have been sweating colored sweat, like the Gatorade commercial.

Instead, I made these Earth-ish cookies the week after, and planted a tree with the kids.

It’s way easier to space the holidays out a bit.

These cookies are pretty easy to make. You can do any sort of sugar cookie and add green Wilson cake dye for the color. I decided to make the Cake Cookies because I wanted them fluffy. Also, I used the deep green color and a touch of violet color to get the “forest green” look the cookies are sporting.

Over achievers may want to make two batches: one green and one blue, then swirl the batters for a more “Earthish” effect. I’m just happy with the chocolate molten lava core.

I started out with chilled dough and sugared my hands to make it easier to work with.

Press chocolate chips into dough:

Form ball around the chips to prevent chocolate leakage.

Place cookies on Silpat–the cake cookies are much easier to remove from a Silpat or parchment paper.

Bake at 350 for 20 to 22 minutes.

If you let them cool, they’ll retain much of their round-floofiness.

Of course, I can never wait, so my cookies are deflated but still gooey in the middle.
