here’s a recipe from a coworker that may give you a place to start. It’s very good and the best way to preserve some squash that I have seen so far and still be within safe parameters regarding density, etc. The author of the recipe uses Delmonte spaghetti sauce – those big cans you can find on sale for a dollar each 🙂
