The homemade version of my favorite lunch at Soho’s Italian Restaurant in Charleston, West Virginia. This open-face sandwich makes a nice, light lunch, or can also serve as a side with an entree such as grilled steak.

fresh basil leaves
thin-sliced red onion
sliced Roma tomatoes
fresh, soft mozzarella, sliced
Layer sandwich in the order ingredients are listed. Serve open-face and cold.
