These pancakes are a great savory take on the traditional breakfast. I like to have them with a little bit of hot sauce on a cool morning.
1 cup cooked spaghetti
1-2 tablespoons Parmesan cheese
ground black pepper (to taste)
hot sauce (optional)
Heat a skillet on medium-high heat.
Scramble one egg in a bowl and add cooked spaghetti and cheese (pepper if using). Stir until all pasta is coated.
Twirl a small amount of spaghetti on a fork and place in pan. Cook until golden and flip (2-3 minutes). Cook on second side until golden (another 2-3 minutes).
