A tasty beet pickle. The spices really jazz it up.
Servings: 3-5 pint jars
2 cups white sugar
2 cups water
2 cups vinegar
1 teaspoon whole cloves
1 teaspoon allspice
1 tablespoon cinnamon
Boil small beets until tender.
Make the syrup of the sugar, water vinegar and spices. Pour over cooked beets and simmer 15 minutes.
Pack into hot sterilized jars and seal!
Admin Note: Process in a boiling water bath for 30 minutes as per the Ball Blue Book and the NCHFP/USDA.
